Stuffed mushrooms

I apologize for the bad picture. I took this on my cell after a few glasses of champagne on New Year’s Eve! Oh well, hopefully yours will look better and taste just as great.
This is a great party appetizer. It also requires very few ingredients and it’s pretty healthy too. I made these for Christmas Eve and New Year’s Eve as well and they were a hit both times. They are also a great make-ahead dish that you can prepare the day before the party and bake off right before your guests arrive. They present very nicely on a platter even though this picture is less than desirable. Your guests are sure to enjoy these.

Ingredients
20 white button mushrooms
1 tbsp garlic chopped
2 tbsp olive oil
2 tbsp chopped onion
1/4 cup seasoned breadcrumbs
1/8 cup grated Parmesan cheese
1 tsp parsley
Salt and pepper

Directions: preheat the oven to 375 degrees. Take all of the stems from the mushrooms and finely chop the stems. Place in a bowl with the remaining ingredients and mix together. Then stuff the mushroom caps with the stuffing mixture and place on a baking sheet and bake for 25-30 minutes until they are brown on top.

Nutrition Facts: for 2 mushrooms- 58 calories, 3.6g fat 3.3g protein
